Green Beans with Green Peppers & Herbs
Green Beans with Green Peppers and Herbs make for a quick and easy side dish so full of flavor that it's perfect for everyday meals.

- 3 cups fresh green beans, washed, trimmed and cut in half
- 2 teaspoons olive oil
- 1 garlic clove, minced (or 1/8 teaspoon garlic powder)
- ½ cup chopped onion
- ½ cup fresh, diced green pepper
- 2 teaspoons fresh chopped basil (or ~ 1 teaspoon dried)
- 1 ½ teaspoons fresh oregano (½ teaspoon dried)
Preparation
- Boil a pot of water large enough to hold the green beans.
- Place green beans in the boiling water, and cook 5-10 minutes, until they are bright green, but still crisp. Drain and set aside.
- Heat oil in a large, nonstick skillet. Add garlic, onion and green pepper, and sauté until soft.
- Stir in the basil, oregano, and green beans, and mix until thoroughly combined.

Makes about 6 servings. Approximate nutrients per serving: 40 calories, 1.5 grams protein, trace fat, 8 grams carbohydrate, 3 grams fiber, 5 milligrams sodium.
